Authenticity is key for us. We pride ourselves on producing beer using time-honoured traditions, hence our focus on using wooden barrels and foudres. It is also about using local produce, foraged ingredients and harnessing Mother Nature to inoculate our beer in our unique, Somerset terroir.
These techniques allow for genuine, rather than forced, flavour. We are transparent in our methods and our research and in detailing our successes and failures. These values are true to our hearts and hopefully resonate with people who are on a similar mission of taste discovery.

Inspired By Ingredients

The wild nature of our beers is seen in the use of alternative fermentations, unorthodox yeasts, seasonally-foraged ingredients and the use of esoteric and exotic produce from far and wide.
Set against the backdrop of the Somerset countryside, we are a true farmhouse brewery sharing our space with Westcombe Dairy, whose cheeses pair naturally well with our beers...
