De Cam

The Oude Cam is an old farm-brewery of the former gentlemen of Gooik. In the 1990s, a community centre was established here, including a folk café and a musical instrument museum. Willem Van Herreweghen, son of the poet Hubert and at that time production director at Palm, set up a geuzestekerij here in 1992 in the outbuildings. In 1997, the first locally cropped geuze was proposed. Wort is purchased from lambic breweries Boon, Girardin and Lindemans. This undergoes a spontaneous fermentation in Gooik. The young lambic obtained from this is further matured in barrels from Pilsner Urquell. Then the assembly of lambic of different ages is done, after which the beer is re-fermented in the bottle for at least another year. The slow, artisanal, production method produces a 100 hectolitre of Oude Geuze and Oude Kriek every year.
